My hometown, Nanxi, Tainan in Taiwan has been known for producing plums. When I was a child, my mother often made plums. At that time, Nanxi plums were exclusively exported to Japan in large quantity. Plum-picking and plum-making were the most common daily activities in the village. Every household had its own plum-making tips, our family is no exception. Mom’s hand-made plums are popular amongst our neighbors through word-of-mouth, and also unforgettable taste in my memories.
Plum-making uses simply pickling techniques, only with sugar and salt, and is also the way to preserve the lifespan of food in ancient times. In addition to the selection of plums are by the machine, the rest of the process is hand-made, and, we only use plums produced in our hometown, Nanxi. The plums we select are only hand-picked, not pole-picked, organic without additives. Our plums are made preserving the natural flavor with the most authentic attitude.
Taste/ traditional soft plum taste, slightly sour and salty, can be added into cooking.
